Cashew Cookies

Like a super clean version of sugar cookies!
Ingredients
- 2 cups cashews
- 1 tsp vanilla powder
- pinch salt
- 1/4 cup melted coconut oil
- 1/4 cup maple
- 1 cup rice flour
- 1 bar super dark chocolate
Instructions
- In a blender, smoosh up the cashews until they look like fine breadcrumbs. Add in the vanilla, salt, melted coconut oil and maple syrup, and pulse a few times until it's all mixed through. Add the mixture into a big mixing bowl and fold in the rice flour until you have a good cookie dough. Try not to eat it all before you bake it!
- Form the dough into 16 even balls and then press them flat on a baking tray (grease with some extra coconut oil or use parchment paper if your tray isn't non stick). Bake the cookies at 180C for 10 minutes, rotating the tray 180 half way through. While your cookies are cooling, melt the dark chocolate (either in the microwave or in a glass bowl over a pan of water, being careful not to burn it). Once the cookies are completely cool, drizzle dark chocolate over the cookies with a fork, or dip them in for an even more indulgent treat!
