Ok, so, not going to try and claim this is remotely healthy (although arguably it’s healthier than the real deal) but what can I do; I wanted to share a little Christmas treat with y’all!
This is so simple; no sugar thermometers or fancy equipment; just a whisk and a bit of patience. Plus there are only 4 ingredients; coconut milk, coconut sugar, vanilla, and sea salt.
I’m not super into traditional Christmas cake, Christmas pudding, trifle, or whatever else, so I’ve included a few alternatives that you could have with the salted coconut caramel sauce instead.

Here’s how to do it?
- 2 cans full-fat coconut milk, chilled overnight in the fridge
- 2/3 cup coconut sugar
- 2 tsp. vanilla powder or 2 vanilla pods, scraped (I know this is kinda fancy, but it's Christmas after all! You can just use vanilla extract if that's what you've got).
- 1/2 -1 tsp. sea salt
- Open the cans and carefully scoop out the solid part of the coconut milk, leaving all the watery stuff in the can. If you forgot to chill your coconut milk (like I did) don't worry, maybe just cook for a tiny bit longer, or until it gets to the consistency you want it at. Ok so dump the solid part in a pan over a medium-high heat until it gets simmery. Add in your sugar, vanilla, and sea salt, whisk together, and let it simmer.Be careful not to let it get too hot because it will burn and boil over the top of the pan and make a huge mess. Keep whisking every 3-4 mins for about 20-30 mins - the longer you cook, the thicker it'll be. Keep in mind that it'll get thicker as it cools down too. Wait until completely cool before serving.
- I gave you a range of salt to add in, but I'm telling you now, I go for the full whack. Remember that it will be spread out over whatever you're pouring or drizzling it on, so the saltiness will get diluted.
